Chai spice MUFFINS

At my recent fundraising event for The Pink Place charity these little delights were a big hit.  Enjoy some yummy winter spice and deliciousness!

175 g butter

175 g self-raising flour

90 g muscovado sugar

60 g Mira’s spice mix  (order from www.chaibymira.com original spice mix - not an ad, I just love this blend!)

½ tsp baking powder

3 large eggs

Step 1

Preheat over to 180 c / gas mark 4.  Line 12 hole muffin tine with cupcake cases.

Step 2

Mix together butter, sugar and spice mix in a large bowl with a wooden spoon until smooth and even.  Add beaten eggs to the mixture then add self-raising flour and baking powder.  Mix well and add mixture evenly into each muffin case.

Step 3

Bake for approx. 20-25 minutes or until cakes are risen and firm on top.  Transfer to wire rack to cool.  I piped some home-made icing on top of each cupcake or simply enjoy as they are.

Winter Spice mix
