VEGAN GINGER CAKE
Ingredients
80ml vegetable oil
250g self-raising flour
120g light brown sugar
1 tsp baking powder
1 tsp ground ginger
2 finely chopped dates
5 crystalised ginger pieces chopped/sliced
30g ginger stems (for icing)
80g golden syrup
Icing
75g icing sugar
1/2 tsp ground ginger
3tbsp ginger syrup
Heat the oven to 180c fan / 200 c. Oil a 900g baking loaf tin and line this with parchment paper.
Mix the flour, sugar, baking powder and ground ginger in a large bowl. Add to this the oil, golden syrup, chopped ginger and dates together with 150ml of cold water. Beat all these ingredients together using a wooden spoon until the mixture is smooth, you can add a little more water here if the mixture is too thick in consistency.
Pour cake mixture into the lined loaf tin and place in the centre of the oven for 50 mins or until a knife or skewer inserted into the centre of the cake comes out clean.
Leave this to cool once cooked on a wire rack. Prepare icing first sieving icing and adding ground ginger together with ginger syrup. The mixture will be thick, drizzle all over the cake and finish with stem ginger.
