Ginger soda
Spicy ginger infused with a touch of clove and cardamon, a perfect warming drink for the chillier days of Autumn.
Ingredients
One cup of chopped or grated fresh ginger
One pinch of ground cardamon and a smidge of clove
Two cups of water
1/2 cup of golden sugar
Soda water to top up
Add ginger and two cups of water to a pan and bring to the boil. Reduce the heat to a simmer for 5 minutes.
Remove from the heat and leave to steep for 20 minutes before straining into a clean pot. Discard the ginger pieces.
In the same pan, add the sugar to another cup of water over a medium heat, stirring until disolved.
Combine both liquids into a clean vessel.
To make, pour 1/2 glass of the ginger cordial and top with soda water.
